Durango's Cho Saigon Market Visit & 50,000 Names" (George Jones)

Durango's visit to Cho Saigon Market got me to wondering what we wouldn't have if America hadn't entered the Vietnam War...that's right I said it. Call it what it really was, it was a war and had America not entered it, there wouldn't be 50,000 names carved into The Wall.

That video was depressing. Stupidest American War ever. And now the people of Vietnam love us. And I like their Pho soup.

One of my suite mates in college, a young Vietnamese girl, introduced me to Bi Cuon Chay, a very delightful veggie spring roll. I absolutely love the fresh basil and mint and when I'm in Denver I always get a noodle bowl with all those ingredients. Annie and I grew basil, mint, lavender and parsley this year...it's been so refreshing to put fresh herbs in our soups and salads.
